ZAATAR SALMON TRAYBAKE

I discovered Zaatar when I was cruising the spice section in my online shop and decided I liked the sound of sesame seeds and oregano together. So my first experiment with it was on a salmon traybake and the rest is history! It's delicious! I'm using tinned new potatoes in this dish for speed, but you could easily use fresh if you have extra time.

Ingredients

  • 2 courgettes
  • 2 red peppers
  • 560g tinned new potatoes
  • salmon fillets (1 per person)
  • 100g frozen onion
  • 50g frozen garlic
  • 4 tbsp zaatar
  • 2 tbsp olive oil

Instructions

  1. Preheat oven 200Âșc
  2. Line a high-sided roasting tin with greaseproof paper
  3. Chop courgettes into semi-circles, peppers into squares and new potatoes in half
  4. Fill the roasting tin up with salmon fillets first, then surround with frozen onion, frozen garlic, courgettes, peppers and new potatoes. Cover with zaatar spice powder and drizzle with olive oil
  5. Roast for 15-20 mins depending on size and shape of salmon fillets
  6. When cooked, serve straight to the table
  7. ENJOY!
