Gnocchi cooks in only a few minutes and you'll be amazed at how quickly this meal will come together! Using cream cheese, Borsin, mascarpone or ricotta straight from the fridge onto hot pasta is the perfect way to make a creamy sauce in an instant. Then open the fridge again and see what else you can bung in for a family meal!

  • 2 tbsp oiive oil
  • 100g frozen onion
  • 50g frozen garlic
  • 500-800g gnocchi
  • 2 courgettes
  • 100g ham of your choice
  • 250g mascarpone
  • lemon zest & juice


  1. Boil the kettle, heat olive oil in wide flat frying pan and warm a saucepan for the gnocchi
  2. When the oil is hot, brown the frozen onion and garlic
  3. Cook the gnocchi according the packet instructions
  4. Meanwhile dice the courgettes and slice the ham- the smaller the dice, the quicker they'll cook
  5. Add the diced courgettes, and cooked gnocchi to the fried onions and garlic and stir in the mascarpone to make a melty sauce
  6. Zest the lemon and sprinkle the ham onto the dish when ready to serve and give everyone a wedge of lemon to squeeze over the top if they wish
  7. ENJOY!
