SLOW COOKED LAMB ROGAN JOSH

This feels like such an authentic curry from the take away and that's why I love it so much. Adding lemon at the end is the trick that makes me feel like a proper foodie who knows her shizz. Once again, this is done in the slow cooker, so make sure you get your head in gear and get it on before you leave the house in the morning.

Ingredients

  • 100g frozen onion
  • 50g frozen garlic
  • 50g frozen ginger
  • 1 kg diced lamb neck
  • 280g jar rogan josh curry paste
  • 2 x 4oog tins chopped tomatoes
  • 100g red split lentils
  • ---
  • basmati rice (90g uncooked per adult, 50g per child)
  • 30g fresh coriander
  • 1 lemon
  • popadoms
  • natural yoghurt

Instructions

  1. Preheat slow cooker
  2. Throw all ingredients above the dotted line into slow cooker
  3. Slow cook for 4 hours on high or 6 hours on low
  4. When cooking time is over, cook rice according to packet instructions, chop coriander and cut lemon into wedges
  5. Serve half of the curry topped with coriander alongside cooked rice, popadoms and yoghurt
  6. Freeze and label the remainder for next week
  7. ENJOY!
