SB – Squash and cowboy beans on sourdough

Beans on toast with a smokey squash twist!

Ingredients

  • 1 tbsp olive oil
  • 100g frozen onion or 1 large onion
  • 50g frozen garlic or 2 cloves fresh garlic
  • 1 tsp smoked paprika*
  • 400g tinned cannellini beans
  • 400g tinned butter beans
  • 400g can of chopped tomatoes
  • 1 red pepper
  • 100g frozen butternut squash
  • 2 sprigs fresh thyme
  • 1 loaf sourdough

Instructions

  1. In a large saucepan with a lid, heat the oil and fry the onion and garlic
  2. Once brown, add the smoked paprika and fry off for 1 min
  3. Add the drained tins of beans, chopped tomatoes, diced pepper and frozen butternut squash
  4. Cover with a lid and leave to simmer for 20 mins
  5. Meanwhile toast enough sourdough slices for diners
  6. When ready, garnish with thyme leaves and serve
  7. ENJOY!

Notes

Vegan *be mindful of the spice rating on the front of the spice tin - some are super hot!
