SB – Squash and cowboy beans on sourdough
Beans on toast with a smokey squash twist!

Ingredients
- 1 tbsp olive oil
- 100g frozen onion or 1 large onion
- 50g frozen garlic or 2 cloves fresh garlic
- 1 tsp smoked paprika*
- 400g tinned cannellini beans
- 400g tinned butter beans
- 400g can of chopped tomatoes
- 1 red pepper
- 100g frozen butternut squash
- 2 sprigs fresh thyme
- 1 loaf sourdough
Instructions
- In a large saucepan with a lid, heat the oil and fry the onion and garlic
- Once brown, add the smoked paprika and fry off for 1 min
- Add the drained tins of beans, chopped tomatoes, diced pepper and frozen butternut squash
- Cover with a lid and leave to simmer for 20 mins
- Meanwhile toast enough sourdough slices for diners
- When ready, garnish with thyme leaves and serve
- ENJOY!
Notes
Vegan *be mindful of the spice rating on the front of the spice tin - some are super hot!
