Ingredients
- Sweet potato - 1 per person
- 1 red onion
- 1 tbsp olive oil
- 10g frozen garlic or 1 fresh garlic clove
- 400g tinned black beans
- 1 red pepper
- 200g cherry tomatoes
- 2-4 avocados
- 30g fresh coriander
Instructions
- Preheat oven 200°c
- Bake the sweet potatoes for 15-25 mins
- Chop up all remaining ingredients into dice for a salad
- Once sweet potatoes are soft, serve topped with salad
