Jacket Sweet potato with a black bean and avocado salad

Ingredients

  • Sweet potato - 1 per person
  • 1 red onion
  • 1 tbsp olive oil
  • 10g frozen garlic or 1 fresh garlic clove
  • 400g tinned black beans
  • 1 red pepper
  • 200g cherry tomatoes
  • 2-4 avocados
  • 30g fresh coriander

Instructions

  1. Preheat oven 200°c
  2. Bake the sweet potatoes for 15-25 mins
  3. Chop up all remaining ingredients into dice for a salad
  4. Once sweet potatoes are soft, serve topped with salad
