SB – Chickpea biryani with cauliflower and cashews

Walk through the door and throw this delicious biryani together in minutes! Every ingredient delivers flavour and plenty of texture for all the family too. Using packet rice is a real cheat, so allow extra time if you'd prefer to cook your own rice.

  • 1 tbsp olive oil
  • 100g frozen onion
  • 50g frozen garlic
  • 2 tbsp curry powder
  • 2 pucks frozen spinach
  • 250g microwave basmati rice or cooked basmati rice
  • 400g can of chickpeas
  • 50g raisins
  • 100g plain cashews
  • 1 cauliflower
  • 100g natural yoghurt to serve


  1. If cooking your own rice, get that 10 mins from ready before starting the next steps
  2. Heat the oil in a large frying pan that has a lid and brown frozen onion and garlic
  3. Once browned, add the curry powder and fry off for 2 mins
  4. Meanwhile cut the cauliflower into small florets and chop cashews to preferred size
  5. Add frozen spinach and cauliflower florets to the curry onion mix, cover and leave for 2 mins for the spinach to defrost and mix in the pan
  6. Add the packet of rice or cooked rice and mix in along with drained chickpeas and heat through for 4 mins
  7. Once the rice has heated through, add the raisins and cashews (grind the nuts for babies) and prepare to serve
  8. Serve with a large dollop of natural yoghurt
  9. ENJOY!
