SAUSAGE & SWEET POTATO TRAYBAKE

Adding poached eggs to this traybake is the magic touch that creates a sauce and much needed lubrication! You may find that younger children aren't keen on the eggs, and that's fine, as it's an added extra. When this dish freezes, the vegetables will break down and create more of a sauce, so it will be even more tasty the second time round.

Ingredients

  • 400g sweet potatoes (3 or 4)
  • 3 different coloured peppers
  • 2 tbsp oiive oil
  • 100g frozen onion
  • 50g frozen garlic
  • 1600g sausages (4 packs)
  • 200g sliced kale
  • eggs - 1 per person for a single meal

Instructions

  1. Preheat oven 200ºc
  2. Dig out two deep baking trays or casserole dishes
  3. Chop the sweet potatoes into wedges and chop the peppers into thumb sized slices
  4. Glug the olive oil into the bottom of your baking trays. Mix up the frozen onions, garlic, sweet potatoes and peppers and sausages
  5. Bake for 20-30 mins
  6. Remove trays from the oven and add the kale. Try to bury it under the roasted veg to prevent the leaves from burning
  7. Return to the oven for a final 10 mins and poaching the eggs
  8. Serve one traybake with eggs on the side. Allow second traybake to cool down and freeze for next week
  9. ENJOY!
