No matter how bare the cupboards are, I always seem to be able to whip up something from the South American style of cooking. This quick bean wrap is made with my favourite beans, the black bean, but you could substitute any kind of bean. In fact, you can mix any of these ingredients up to suit your family’s tastes. And you could even lay the ingredients out for everyone to build their own wraps.

I deliberately haven't included quantities here as you will need to judge how much you need depending on the number of people you are serving. With wraps, my best advice is, you never need as much as you think!

Ingredients
- Wraps
- Hummus
- Avocado
- Sweetcorn
- Tomatoes
- Tinned black beans
- Spinach - optional
- Coriander - optional
- Lime - optional
- Chipotle - optional
- Garlic - optional
Instructions
- Chop all the salad ingredients into a mixing bowl and squeeze with lime if using
- Coat the inside of wraps with hummus
- Fill with salad and wrap up by folding the bottom up by a third first and overlapping the sides at the middle
- Enjoy!
