PORK AND CIDER STEW

This is another slow-cooker recipe, so again, get your head in gear at breakfast and you'll have a brilliant dinner on your return. Slow cooking the carrots and potatoes in cider gives you amazingly sweet and mushy textures like a soup, so think about serving with some crunchy green veg for a contrast.

Ingredients

  • 8 carrots
  • 500g new potatoes
  • 100g frozen onion
  • 50g frozen garlic
  • 1 kg diced pork shoulder
  • Vegetable stock cube/pot
  • 500ml cider or apple juice
  • ---
  • 30g flat leaf parsley
  • green veg

Instructions

  1. Preheat slow cooker
  2. Wash and chop carrots into rounds - only peel if absolutely necessary
  3. Throw all ingredients above the dotted line into slow cooker
  4. Slow cook for 4 hours on high or 6 hours on low
  5. When cooking time is over, prep green veg
  6. Serve half alongside the green veg
  7. Freeze and label the remainder for next week
  8. ENJOY!
