LAZY CHICKEN FAJITAS
Most families I know do fajitas regularly, but this is my lazy version -it's all done in the oven. All the hard work you have to do is the fridge Tetris getting all the tubs and jars in and out! Oh, and there's a tiny bit of chopping too, but even that can be done at the table if you're super lazy like me...

Ingredients
- 4 tbsp olive oil
- 1 kg chicken thigh fillets
- 4 tbsp fajita spice mix
- ?
- 2 red peppers
- 2 yellow peppers
- 100g frozen onion
- 50g frozen garlic
- 100g cheddar cheese
- 100g cherry tomatoes
- 2 avocados
- 100g hummus
- 100g fresh salsa
- 150ml soured cream
- 100g grated cheese
- wraps - 1 per pseron
Instructions
- Preheat oven 200ºc
- Splash 2 tbsp olive oil into a two roasting dishes or trays large enough for your chicken fillets to lay flat
- Coat chicken thighs in fajita spice, split between the two roasting dishes and roast in the oven for 35 min (if you have members of the family who would refer plain chicken, do half and half with spice mix)
- Meanwhile chop peppers into sticks
- After 20 mins cooking time, add pepper sticks, frozen onion and frozen garlic into both roasting tins
- Grate cheddar cheese, chop cherry tomatoes and slice avocados
- Once chicken and veg are ready, serve half the chicken with all the accompaniments on the table - stick spoons in pots for all to dig in to
- Freeze the second tray of chicken read for next week
