LAMB KOFTAS

This is a lamb version of fajitas - so put the time and effort into making the koftas and the only job left to do is get tubs out of the fridge and onto the table. I use ordinary wraps for my koftas instead of flatbreads, as they don't crumble when rolled up like flatbreads tend to. And much like the meatloaf, keep back the batch for next week, otherwise they'll all get devoured!

Ingredients

  • 1 kg minced lamb
  • 100g mango chutney
  • 100g frozen onions
  • 50g frozen garlic
  • 50g frozen ginger
  • 2 tbsp ground coriander
  • 2 tbsp ground cumin
  • ---
  • wraps (1 per person)
  • 100g cherry tomatoes
  • half a cucumber
  • 100g rocket
  • 100g natural yoghurt

Instructions

  1. Preheat oven 200Âșc
  2. Line two or three baking trays with greaseproof paper
  3. In a large mixing bowl, combine all the ingredients above the dotted line and mix with hands
  4. Using your hands, lay evenly sized sausage shapes of lamb mince mixture onto baking trays and bake for 15-20 mins - you may need to rotate the trays for even browning
  5. Meanwhile, chop cherry tomatoes in half, slice cucumber into sticks, empty rocket into serving bowl and lay out on the table along with the yoghurt
  6. When koftas are ready, serve half on the table with the accompaniments and keep half back to freeze for next week
  7. ENJOY!
