HARISSA BEEF TAGINE
This dish is slow cooked, so make sure you're on it in the morning to get it all on before you head out. What I love about this dish is the depth of flavour considering how little time you have to put the preparation! Be mindful of the spice levels of the harissa paste you use - they all differ and the recipe quantities require a judgement call by you at this point!

Ingredients
- 6 x carrots
- 100g frozen onion
- 50g frozen garlic
- 1.5kg beef stewing steak
- beef stock pot/cube
- 2 x 400g tins chopped tomatoes
- 200g harissa paste (depending on spice level desired and delivered)
- 2 x 400g tin chickpeas
- 200g raisins
- ---
- couscous (60g uncooked per adult, 30g per child)
- 200g green veg
- lemon
Instructions
- Preheat slow cooker
- Wash and chop carrots into rounds - only peel if absolutely necessary
- Throw all ingredients above the dotted line into slow cooker
- Slow cook for 4 hours on high or 6 hours on low
- When cooking time is over, prep couscous and green veg
- Serve half tagine garnished with grated lemon zest and a generous squeeze of the juice alongside the couscous and green veg
- Freeze and label the remainder for next week
- ENJOY!
