COUSCOUS PAELLA
Couscous is my favourite go-to carb. It's so quick to make and generates no washing up at all if you make it straight into the bowl you're going to serve it up in. A touch of turmeric gives it the classic paella colour and I personally think that the yoghurt on the side is the genius touch that a traditional paella is missing! Add prawns and veg and HOLA! you have a happy Spanish classic made up in minutes!

Ingredients
- 200g couscous
- 2 tbsp olive oil
- 100g frozen onion
- 50g frozen garlic
- 1 tsp turmeric
- 200g cherry tomatoes
- 100g frozen peas
- 200g ready cooked prawns
- 30g fresh parsley
- 200g Greek natural yoghurt
Instructions
- Boil the kettle and warm a wide flat frying pan with olive oil
- Place couscous directly into serving bowl, cover with 250ml boiling water, cover with a plate and leave for 6 mins
- Brown frozen onion and frozen garlic in olive oil
- Meanwhile chop cherry tomatoes in half and chop parsley for garnish
- Add turmeric and cook for 1 min
- Add cooked couscous and frozen peas, stirring to disperse turmeric colour throughout
- Place couscous back in serving bowl and top with prawns and parsley
- Serve with yoghurt on the side
- ENJOY!
