CHILLI PRAWN LINGUINE

This is such a simple dish you'll be wondering what's missing - until you taste it! If you adore spice, you can add as much as you like at the table without upsetting any tiny people!

Ingredients

  • linguine (90g uncooked per adult, 50g per child)
  • 4 tbsp olive oil
  • 100g frozen onion
  • 100g frozen garlic
  • 200g cherry tomatoes
  • 60g rocket leaves
  • 200g cooked king prawns
  • chilli and garlic oil for the table

Instructions

  1. Boil the kettle and warm one large saucepan and one large frying pan on the hob
  2. Cook the linguine according to packet instructions in the big saucepan
  3. Heat olive oil in the large frying pan and gently brown the frozen onion and frozen garlic for 10 mins- it will appear oily, but it will serve as the sauce for the pasta
  4. Meanwhile slice cherry tomatoes in half
  5. Once the pasta is cooked and drained, mix it with the onion and garlic mix, tomatoes, prawns and rocket
  6. Serve on the table with chilli and garlic oil
  7. ENJOY!
