Chicken traybake is the totem meal for Feed the Brood. It's the perfect family meal! You can add anything you fancy into a chicken traybake and it will always turn out lush. I've added chorizo to this one, so it has a tasty spice to it. I get the mild chorizo sausage ring so that it's not too hot for the children - they actually fight over who gets the last piece!

  • 3 different coloured peppers
  • 240g chorizo sausage
  • 2 tbsp olive oil
  • 100g frozen onion
  • 50g frozen garlic
  • 1kg chicken thigh fillets
  • 200g cherry tomatoes
  • 2 corn on the cobs
  • couscous (60g uncooked per adult, 30g per child)
  • 50g pine nuts
  • 30g basil
  • lemon


  1. Preheat oven 200ºc
  2. Chop peppers into large squares and chorizo into 1cm circles
  3. Splash 2 tbsp olive oil into a two roasting dishes or trays large enough for your chicken fillets to lay flat
  4. Fill both trays with frozen onions, frozen garlic, chicken thighs, chorizo and peppers and bake for 20 mins
  5. Meanwhile chop corn on the cobs into small wheels 1 inch across
  6. After 20 mins, add cherry tomatoes and corn into one of the traybakes
  7. Bake for a further 20 mins and prepare couscous in serving bowl topped with a plate to save cling film
  8. Serve one traybake topped with pine nuts, basil and lemon zest alongside couscous and lemon wedges
  9. Bag, label and freeze second traybake for next week
  10. ENJOY!
