Fajitas can be a quick and easy week night dinner! It really is possible. What's more, the children love this kind of construction meal where they can build a wrap of their choice. If you're battling with a fussy eater, this is definitely a meal you can sit back, relax and watch them enjoy.

Here's how to make it a simple week-night affair

  • Traybake whole chicken thighs, onions and peppers using a fajita spice mix in the tray itself and add some chopped coriander at the end
  • Chop avocados up and serve them au naturale instead of fussing with guacamole
  • Do the same with tomatoes or purchase a shop bought salsa - we particularly like a spicy Tacklements one
  • Serve hummus, salsa and soured cream straight out of the pot to save on washing up:)
  • If your partner is home later, you can easily make them up a delicious wrap and keep it warm in the oven for when they arrive back
