  • Traybake whole chicken thighs, onions and peppers using a fajita spice mix in the tray itself and add some chopped coriander at the end
  • Chop avocados up and serve them au naturale instead of fussing with guacamole

TRAYBAKE

Bake chicken thighs whole plus wedges of onion and squares of peppers covered in fajita spice mix.

180º 30-45 mins

Pour away liquid if it pools in the baking tray.

Once cooked, chop chicken up into bitesize pieces.

Serve sprinkled with chopped coriander.
