P A N C A K E S // I’ve called these Manky Banana Pancakes.

🍌Not the sexiest name, but it’s important to know just how useful an old banana can be if you chuck it in the freezer!

🍌These pancakes are absolutely brilliant. They were inspired by some of @myfussyeater Ciara’s pancakes a while ago, and I’ve been making them ever since. They end up different every time & I love experimenting with the things I can add. This batch has 280g of leftover porridge in it from this morning’s breakfast!

🍌The most important thing you need to know about them is that they are perfect energy food for a trip out. Cook up a batch before heading out, bung them in a sealed Tupperware, and then whip them out for a really filling snack chock full of goodness!

F R E S H // Little kitchen hack for you on a Monday morning. Check if your eggs are fresh by popping them into a glass of water. They sink if they’re still good. And they float if they’re bad.

🥚We’re quite big on eggs in this house. My husband keeps a batch of soft boiled eggs in the fridge for his lunches. And I LOVE egg mayo sandwiches with an obscene amount of seasoning.

C O O K B O O K ❤️❤️❤️// It’s ok to have a cookbook obsession if I’m using them for ‘work’ isn’t it?😬

💚This week I’m featuring this Vegan cookbook from the One Pound Meals mogul, Miguel Barclay.

💚Miguel has mastered the art of amazingly tasty food on a budget and the main reason I love his style of cooking is that it’s almost exclusively fuss free, so it’s perfect for speedy family meals.

💚Now, I don’t envy Miguel the challenge of making cheap and easy vegan meals. There are a lot of boxes to tick there, but he has nailed it. His recipes are always packed with flavour and I love the way his recipes travel around the globe too. Overall, there’s a strong selection of Mediterranean and Asian dishes - all with a fusion twist which usually makes them simpler to make. Always a winner with me.

💚Favourite dish in the book, Mexican Kidney Bean Salad. I’m a bore with how often I make it… and I’m planning on smashing out his verde gnocchi/pasta invention alongside dinner one night this week because I cannot believe it would be that simple…
